Best Ever Baked Meatballs

I love making a bunch of these and freezing them. When I want to make dinner, I defrost some in a pot of sauce on the stove while pasta is cooking on the burner next door. Great for a weeknight meal!

Avocado and Three Bean Salad

Cold Cut sandwiches for lunch all week with a side of Avocado Three Bean Salad. This salad holds up well in the fridge and tastes great cold.

These three meals are quick to make during the week and makes easy to heat leftovers.

CJ's now screams his head off until I set dinner in front of him. I start dinner as soon as we get home everyday. I also brought home a stack of labs that need marking. I needed dinner fast!

I was able to prepare One Pan Cilantro-Lime Chicken & Rice with Black Beans because I finally remembered to defrost chicken! I wanted to make this recipe two nights ago.

It was so easy to cook this meal. Cut up the chicken, toss into a large stock pot, add the rest of the ingredients, and allow 5-6 minutes to let the rice come alive. That gave me enough time to load the dishwasher and put away recycling. I am not a fan of cleaning up after dinner, so this worked for me!

I was in his way...

CJ loved this. It has all of his favorite things: chicken, beans and rice. Our dogs enjoyed cleaning up the floor after he dropped rice everywhere. I did not get a photo of the finished product but you can pin this recipe from Cooking Classy.

Cherry Tea

This week we had the in-laws in town. Last Sunday, we went to visit the Celestial Seasonings Tea House. I was there to take the tour a few years ago with my mother when she was in town. Since then they have created new logos on their products.

I like going on the tour. I have never stayed in the peppermint room for longer than 5 seconds. I just cannot do it! I like learning little things about the teas. Did you know that there are three different type of mint that Celestial Seasonings uses in their teas? Peppermint, spearmint, and catnip. Catnip is blended in their Tension Tamer herbal tea. I made sure to buy a box of that. Also, most of the teas that Celestial Seasonings makes is not actually tea. They call their products herbal tea because they are not made from tea leaves, but with herbs.

After the factory tour you get to visit the gift shop. I picked up a sample pack of Black Cherry Berry.  It it so good! It smells and tastes just like cherry Jell-O. I think I will enjoy this cup before I have to pick CJ up from daycare.
