Once Pan Cilantro-Lime Chicken and Rice with Black Beans

CJ's now screams his head off until I set dinner in front of him. I start dinner as soon as we get home everyday. I also brought home a stack of labs that need marking. I needed dinner fast!

I was able to prepare One Pan Cilantro-Lime Chicken & Rice with Black Beans because I finally remembered to defrost chicken! I wanted to make this recipe two nights ago.

It was so easy to cook this meal. Cut up the chicken, toss into a large stock pot, add the rest of the ingredients, and allow 5-6 minutes to let the rice come alive. That gave me enough time to load the dishwasher and put away recycling. I am not a fan of cleaning up after dinner, so this worked for me!

CJ loved this. It has all of his favorite things: chicken, beans and rice. Our dogs enjoyed cleaning up the floor after he dropped rice everywhere. I did not get a photo of the finished product but you can pin this recipe from Cooking Classy.
